Looking for the best option for a prepaid sim card for Italy, Germany & Portugal. I would prefer to only buy 1.

Many thanks

There's no data option which gives you data for all the 3 countries, I suggest you to buy one for each.

Working Prepaids: IT: Wind, Vodafone IT, UNO Mobile; SM: Prima; UK: 3, Virgin; INT: TravelSIM, Truphone.
Deceased Prepaids: CZ: Oskar, Eurotel; SK: Orange; DE: E-Plus, Aldi, Simyo; GE: Geocell; AM: Armentel; PL: Heyah, Plus; LT: Tele2; LV: Amigo; EE: Elisa; UA: Kyivstar; NZ: Vodafone; INT: UM, UM+, ICQSim.
GSM/3G Phones: Nokia Lumia 630 dual sim

For Italy Wind could be fine, but any option is OK. For the other countries I don't know, take a look at the other forum rooms

So... I have arrived home. Vodaphone is the right choice. It is valid for 11 months and can be used and recharged throughout Europe. One minor drawback is the inability to send international text messages. Worked well otherwise! Highly recommended.

You can refill Vodafone Italy cards using Vodafone UK refill vouchers, for example. Same with Vodafone Spain, etc...

You can send International SMS with Vodafone, but most of the times they never arrive to their destination number (or you never receive them if someone sends you one). TIM and Wind are much better, in Italy, for international SMS.
