I don't know about call blue, but as for riiing/UM:

You are correct, callerID will not show if they are calling you throught the 800#. I believe you can disable the VM/call divert by dialing 066. It's enabled by default.

As for SMS, just navigate to sending SMS on the phone, and then either choose or enter the number by preceeding it with a +(Int'l dialing code) and the country code. It's best to store all the numbers on the phone in this format anyway. So, to call/SMS UK it will be +44number, US will be +1555112222

The phone's manual will give you more info regarding sending SMS.
