According to Steve Jobs announcement, the phone ships with Google Maps. You can run programs coded to Web 2.0 -- which means dumb widgets. I doubt it will support VOIP, but I think you could make an SMS widget.

The phone has an external SIM card slot, so I doubt the Sim Card cannot be removed. The phone will be released tonight. I'd just wait until Tuesday of next week and then start reading. Tonight's impressions will be all over the map and people will make a number of good faith mistakes.
